Yet another DELICIOUS popcorn recipe. It is popcorn that tastes like a cinnamon roll. Can life get any sweeter? I submit that it cannot!
I didn’t have a party that I was hosting or going to for this batch, so I wrapped up little bags to give to some of my neighbors. I hope they don’t mind my telling you, but most of them admitted to not sharing with their kids. Yup, this is the kind of treat that you are going to go hide in the attic to eat so you won’t have to share. Surely, this would be a safe treat to prepare for a party because your guests are going to love it!
Here is what you’ll need:
Recipe by Our Best Bites (I left out the Pecans – not my cup of tea)
12 C popped popcorn (about 1/2 C kernels if using an oil popper or air popper)
1 C brown sugar
3/4 t cinnamon
1/4 C Karo syrup (or honey makes a good substitution)
1 stick real butter (1/2 C)
1/2 tsp. baking soda
1 tsp. vanilla
6 oz White Chocolate Chips
Preheat oven to 250 degrees
Place popcorn in a LARGE bowl and set aside. Mix together brown sugar and cinnamon in a 2 Quart microwave-safe bowl. Chop butter into chunks and place on top of sugar mixture. Pour corn syrup (or honey) over the top of everything.
Microwave on high for 30 seconds and then stir to combine. Return to microwave and heat for 2 minutes. Remove and stir and then microwave for 2 minutes more.
Remove from the microwave and add in vanilla and baking soda. It will start to foam up a bit. I bet you’re glad you used the 2 Quart bowl, like I told you. Pour right over the popcorn and begin to stir immediately. Continue stirring until the popcorn is coated in the cinnamon-caramel mixture.
Pour onto a foil-lined jelly roll pan. Place in the oven and bake for 30 minutes, stirring every 10 minutes. While that is baking, prep your “cooling area”. Take a spray bottle of water and spray your cooling surface. Then, lay foil on the wet surface. This makes it so your foil will stay put and your precious popcorn will be safe. Neat trick I learned from this guy while learning to make ciabatta bread.
When your popcorn is done baking, pull it out, give it a stir, and transfer it to your cooling area. While it is cooling a bit, melt your white chocolate chips. Pop it in the microwave for 30 seconds. Stir. Continue microwaving 10 seconds at a time and stirring until just melted. Don’t over do it. From here, I like to put my melted chocolate in a ziplock bag, cut the corner off, and gently drizzle the chocolate over the popcorn. Let that cool until the chocolate is hard.
This is a great addition to a popcorn bar at a “ready to pop” baby shower, neighbor gifts at Christmas-time, or just to indulge while watching the latest Nicholas Sparks movie. Enjoy!
